
1 Bunch parsley
2 Tbsp jaggery
1 Tbsp fresh tamarind (You may want to lessen the amount if using store bought tamarind pulp)
1 Tbsp dry/freshly grated coconut
Salt and red chili pepper to taste
1 cup hot water
Blend all and drizzle olive oil and enjoy!
This same recipe but with 1/4th cup hot water can be used to make chutneys to eat with steamed cakes like idles, dhoklas etc.
