Kadhi is a famous indian recipe made with buttermilk and gram flour. There are hundreds of variations to it. And I miss it after becoming vegan. But yesterday accidentally I made up a vegan kadhi. It is the most simplest one and you can make all kinds of variations (find the variations on youtube or recipe sites).
Before starting the heat make the following preparations:
1. Almond milk: Braised Almonds soaked and blended into a thin smoothie with 3 cups of water.
2. Crush some ginger and a chili to a paste.
3. 3 table spoons of gram flour. Roast it until it smells nice. Let it cool down. Add it to 1/4th cup water in a bowl and mix well making sure no lumps are left.
Roast carom seeds and cumins seeds in a deep pot.
Add the almond milk and ginger-chili paste.
Add salt and turmeric
Let it boil on low heat. Keep mixing so that it does not stick to the bottom. Also keep the heat low else the milk will curdle.
Add the gram flour paste once it has boiled for 5 minutes.
Let it boil until the mixture thickens to your desired consistency and the flour is cooked.
Add chopped onions and boil for another minute.
Take off from heat.
Give a tempering of mustard seeds, curry leaves.
Add coconut oil, garnish with cilantro and squeeze in lemon juice to give that tart buttermilk taste serve!
P.S: You could use fermented almond milk probably?? to give a tart taste. I will try next time.
The kadhi was such a surprise to us and it tasted exactly like buttermilk kadhi.
