Steamed white rice with saffron and one bay leaf. Later added roasted cumin and coconut oil with some salt.
Salad: Cabbage, Beans tender and fresh from garden, olive oil, lemon juice, salt, herbs dried at home (rosemary, oregano, thyme)
Plantain Kabab: Cook Green Plantain by boiling. Mash it up in a food processor. Add grated raw cauliflower or lightly steamed small chunks of cauliflower, roasted/steamed finely chopped garlic, salt, coconut oil. Mix all with hand and make balls.
Chutney: Roasted peanuts (I always roast peanuts to avoid any fungal infections), cilantro fresh from garden, lemon grass, ginger, fresh turmeric root/dried turmeric powder, salt, olive oil, lemon juice. Blend all.
