Potato with Eggplant (Brinjal)



Potatoes – 5 nos. medium sized

Eggplant – 1 no.

Fresh coriander leaves – 1 handful

Fresh mint leaves – 5-6 leaves

Peanuts – 1 handful

Fresh Capsicum / Green pepper – 2 no.

Cucumber – 1 no.

Olives – 7 nos.

Spices as per the taste


1. Peel and wash the potatoes and wash the Egg plants.

2. Cut them in medium pieces, around 1 inch.

3. Transfer them to the steamer and add the peanuts.

4. Chop the green pepper, coriander and mint leaves in small pieces and add.

5. Add spices to taste

6. Add ketchup and mix all the ingredients together.

7. Steam for 45 min.


Transfer the contents to the dish, add oil and garnish with fresh mint leaves, sliced cucumber and olives. Serve hot.
