Barley Crepes

A quick, filling dish. Can be used as a replacement to bread/chapatis/traditional black gram dosas.

Soak barley for an hour or two. Blend with less water if you want to make thick uttapam or chapati style crepes. Blend with more water if you want to make thin dosa/crepe style crepes.

Optionally add ginger, garlic, cumin, green chili or any spice of your choice with salt.

The nice thing is this does not stick to the pan at all. No need to grease the pan with oil. If you need to, then use coconut oil.

May be you can even try sweeter pan cakes with banana or jaggery added.

Since barley is very sticky, you will not need eggs or flax to bind it.
