A full fledged raw meal recipe.

1. Ridge-gourd, onion, parsley, lemon juice, olive oil, salt. Massage all together nicely and let it marinate for at least half hour. Believe me, do not tell what’s in there to someone you serve this and they will think they are eating cucumbers instead of ridge-gourd :-).

2. Peas and carrots. To make them a little bit tender you can take some warm water and let

them sit in the water for 15 minutes. Here I have dressed them with grated coconut butter. Add oil and salt to taste.

3. Dip: Zucchini, Tahini, 1/2 clove garlic, lemon juice. This is the only way I can eat zucchini :-). Its great as a dip or spread for crackers and breads as well.

If you are not 100% raw you can serve these 3 dishes with bread/chapati.
