- 1 large Eggplant
- 1 tsp. Tamarind Paste (homemade) or equivalent amount of lemon juice if tamarind is not available. ( I just steam a bit of tamarind with eggplants. I do not make pulp before hand ).
- 2-4 Garlic Cloves
- Salt to taste
- Pinch of Turmeric Powder
- 1/4 cup Cilantro chopped
- 3-5 Curry Leaves
- 2 tbsp. Cold pressed organic oil.
- Â½ tsp. Mustard Seeds
- Â½ tsp. Cumin Seeds
- Â¼ tsp. Fenugreek Seeds
- 1 tsp. Coriander Seeds
- 1 tbsp. Sesame Seeds.
Optionally steam eggplant pieces lightly. Optionally steam garlic cloves if you are not used to eat raw garlic.
Grind all seeds in a mortar or grinder.
Grind ground seeds and rest of the ingredients together.
And you are done!
Eat with crackers, bread, rice, Idli, Dosa or as is.
